  • 500ml loaf tin

Instructions

  1. Preheat your oven to 160°C, fan 140°C, gas mark 3.
  2. In a large bowl, mix the olive oil and sugar mix together.
  3. Add the eggs and mix in. In another bowl, mix the almond flour, polenta and baking powder together, then add to the wet mixture.
  4. Mix until fully combined. Add the lemon zest and juice and mix well for about a minute.
  5. Oil and line a 500ml loaf tin.
  6. Pour in the mixture and smooth off on top.
  7. Bake for 60 minutes, turning once.
  8. Take out of the oven, cool, remove from the tin and place onto a wire rack to cool completely.
