Sweet Yeast Bread

Ingredients
- 230 g Dr. Coy’s Flour Mixture
- 1 teaspoon baking powder
- 1 sachet dry yeast
- a pinch of salt
- 85 g butter
- 2 eggs (size M)
- 2 tbsp. milk
- 65 g Dr. Coy’s Sugar Mix for Baking
Also:
- loaf pan (approx. 10 x 25 cm)
- butter for the tin
- 1 egg yolk for brushing
Instructions

In a bowl, mix 180 g of Dr Coy’s Flour Mixture with the baking powder, yeast and salt.
- Melt the butter in a small saucepan, or in a bowl in the microwave. In a mixing bowl, beat the eggs with the milk and Dr Coy’s Sugar Mix for Baking with a hand mixer for about 5 minutes until light and creamy. Stir in the warm butter, then stir in the flour, baking powder and yeast mixture.
- Cover the dough and place it in the fridge for at least 1 hour so that it can rise.
- Grease the loaf pan. Add the remaining 50 g of Dr Coy’s Flour Mixture to the dough with the dough hooks of the hand mixer, pour into the greased pan and leave to rise for approximately 1 hour in a warm place, or in the oven at 35°C, top and bottom heat.
- Preheat the oven to 180°C. Brush the top of the dough with the egg yolk. Bake the bread in the centre of the oven for approximately 25 minutes. Leave to rest in the pan for 15 minutes, then turn out onto a wire rack.
